The sodium benzoate is usually produced by the neutralization of benzoic acid with sodium hydroxide. The sodium benzoate is widely used as preservative in food and beverage industries and has the E number E211. Because it is bacteriostatic and fungistatic under acidic conditions, it is usually applied in acidic foods, like salad dressings (vinegar), carbonated drinks (carbonic acid), jams, and fruit juices (critic acid ), pickles (vinegar), condiments. Also, it can serve as preservative in medicines and cosmetics. Because of its capacity to bind amino acids, the sodium benzoate can be utilized as a treatment in pharmaceutical applications for urea cycle disorder, like hyperammonemia. Moreover, the sodium benzoate is utilized in fireworks as a fuel in whistle mix. It is also used in automotive and other antifreeze products.
