The potassium benzoate is high quality fine potassium salt of benzoic acid and has an E number E212. It is specially manufactured for food and beverage use to replace sodium benzoate in applications where the preserving power of benzoic acid is required but where a low sodium content is desired.

The potassium benzoate is a slightly hygroscopic, white, odorless, or almost odorless product.

Because it has activity against yeast, mold and bacteria, it is widely used as preservative in foods and beverages like fruit juice, sparkling drinks, soft drinks, butterine, attenuant butterine, wine, and pickles. In addition, the potassium benzoate is also used in the whistle in many fireworks.
